A delightful and comforting meal comes together with warm chickpeas, a spicy tomato and coriander salad, and soft, homemade flatbreads. Instead of blending, the chickpeas are gently heated, offering a rustic texture that harmonizes perfectly with tahini, yogurt, lemon, and aromatic spices.
The preparation for “Musabaha with Spicy Cherry Tomato and Coriander Salad” begins with chickpeas. Two 400g cans of drained chickpeas are gently simmered in water for about five minutes, then drained while reserving around 300ml of the cooking liquid. The salad combines halved cherry tomatoes, finely diced cucumber, red pepper, coriander, spring onions, a green chilli, and a crushed garlic clove. Lemon juice, white-wine vinegar, olive oil, sumac, dried mint, Aleppo chilli, and salt are added to the mix for a fresh, spicy flavor.
For the chickpea dish, olive oil is heated in a saucepan, and crushed garlic is cooked until golden. A chopped chilli is added, followed by the chickpeas, reserved liquid, ground cumin, tahini, yogurt, lemon juice, and salt. The accompanying flatbreads, flavored with turmeric and nigella seeds, are prepared by combining 150g of full-fat Greek yogurt with bicarbonate of soda until it bubbles. Water, 00 flour, wholewheat flour, turmeric, nigella seeds, and salt are added, creating a soft dough after five minutes of kneading. Divided into eight portions, the dough balls rest for ten minutes before being rolled into rounds and cooked on a hot grill or frying pan until marked with light char spots. Melted ghee or butter is brushed over the hot flatbreads to enhance their flavor.
To serve, the golden flatbreads are presented alongside the warm musabaha. Diners are encouraged to tear off pieces of bread to scoop up the chickpeas and fresh tomato salad, creating a simple yet flavorful meal that is both satisfying and comforting.
